3.2. Định nghĩa sản phẩm.
Spread là những thực phẩm ở dạng lỏng hay nhũ tương dẻo, bao gồm nước, dầu và mỡ có thể ăn được. Dầu và mỡ có thể ăn được nghĩa là những loại thực phẩm có chứa glyceride của các acid béo từ thực vật, động vật hoặc có nguồn gốc từ biển. Nguồn dầu và béo được sản xuất từ động vật phải có sức khỏe tốt tại thời điểm giết mổ và thích hợp với sự tiêu thụ của con người như được xác định trong các tài liệu đáng tin cậy của luật pháp quốc gia. Dầu và béo có thể chứa đựng một số lượng nhỏ của những lipid khác như phosphatide, những thành phần không xà phòng hòa được và các acid béo tự do hiện diện tự nhiên trong dầu và mỡ.
3.3. Chỉ tiêu chất lượng của sản phẩm:
Theo tiêu chuẩn CODEX cho chỉ Tiêu chất lượng của spread:
Hình thái: bề mặt láng bóng không nứt hoặc nhăn bề mặt
Màu sắc: có màu vàng của bơ
Vị: có vị hơi mặn
Mùi : có mùi đặc trưng của bơ
Chỉ số axit 0.5mg KOH/g
Chỉ số peroxit 2g I2/100g
Chỉ số Iod 5g I2/100g
Chỉ số xà phòng hóa 165-185 mgKOH/g
Điểm nóng chảy 37-53oC
Chất không xà phòng hóa 1%
Hàm lượng muối 2-3%
Hàm lượng xà phòng 0.005%
Phản ứng Kress không có
Độ ẩm 15-20%

5. Kết luận
Qua tiểu luận Công nghệ sản suất spread, nhóm đã tìn hiểu được nguyên liệu dùng để sản xuất spread, các chỉ tiêu của nguyên liệu khi lựa chọn để sản xuất sản phẩm. Đồng thời, nhóm đã tìm hiểu quy trình công nghệ sản xuất spread theo phương pháp truyền thống và đề xuất một quy trình công nghệ sản xuất spread theo phương pháp hiện đại thanh trùng và đồng hoá bằng siêu âm, so sánh 2 quy trình công nghệ về ưu nhược điểm của mỗi quy trình. Bên cạnh đó, nhóm đã tìm hiểu về chất lượng sản phẩm, các yêu cầu kỹ thuật của sản phẩm spread.
Qua tiểu luận trên, mỗi thành viên đã thu được rất nhiều kiến thức vô cùng quý báu về mặt cơ sở khoa học cũng như thiết bị sử dụng trong sản xuất sản phẩm thực phẩm nói chung và spread nói riêng và có sự tiếp cận giữa lý thuyết và thực tiễn.
