Người được phỏng vấn: Thường cái kinh nghiệm rán nem là...cái lần rán đầu tiên trong cái dầu đấy không được ngon lắm, vì cái dầu đấy nó vẫn còn đang mới nên nem rán rất là lâu thì mới vàng được, mà thường nó không trở nên vàng, mà nó vẫn còn trắng và nó dễ bị cháy. Nếu mà mình gói nem lại, mà cái vỏ của mình bị vỡ ra, thì lúc mà cho vào chảo rán lâu, nó sẽ cháy lại cái chỗ đấy, thì như thế là không tốt. Nếu mà có thêm một lớp nữa thì nó lại thành rất dai, và nó không giòn nữa. Cách tốt nhất khi mà rán là để những cái nem xa nhau ra một chút, chúng ta không nên rán nhiều nem quá trong một chảo dầu. Khi mà mình cho một cái nem vào chảo dầu thì mình nên để nó một lúc trước khi mà cho những cái nem khác vào. Chúng ta không nên cho rất nhiều nem vào một lúc mà nên tách nó ra dần dần. Khi mà mình rán đợt đầu tiên thì nem nó sẽ không được vàng và ngon, đến đợt thứ hai, thứ ba khi dầu của mình đã trở nên vàng rồi, thì lúc đấy cái nem sau mà mình cho vào rán sẽ trở nên rất là vàng và ngon, và cũng hạn chế bị cháy. Thường rán nem sẽ mất khoảng tầm mười phút cho một đợt nem, nói chung là khá là lâu.
Người phỏng vấn: Ồ, em nghĩ là gói nem cũng là một nghệ thuật...
Người được phỏng vấn: À đúng rồi khi mà...
Người phỏng vấn: ...có mẹo gì để mà gói bánh tráng không ạ?
Người được phỏng vấn: Khi mà gói nem thì chị nghĩ là cái lượt gấp vào đầu tiên ấy, tức là mình để phần nhân của mình như này, và mình gói lại cái lớp đầu tiên thì mình phải làm sao cho nó thật là chắc, như thế cái nem sẽ không bị lỏng lẻo ra.


English Translation

Interviewee: Usually when frying spring rolls, the trick is... the first fry won’t make good rolls. Because we use new oil, it takes a long time for rolls to turn golden brown; usually the rolls don’t turn golden brown, they remain white and burn easily. If we wrap the rolls up, and the wrappers get broken, leaving the rolls for a long time in the frying pan will burn them, which is not good. If we wrap another layer around the rolls, they get tough, and not crispy. The best way to fry rolls is to put them in separately, and we should not fry too many rolls in the pan at the same time. When putting a roll in the pan, let it stay for a while before putting another one in. We should not put too many in at the same time, but instead [put them in] one by one. The first fry won’t produce golden brown rolls, but the second, third fry, when the oil has turned brown, will produce golden brown and very delicious fried rolls, which are also less likely to burn. Usually it takes about ten minutes for a roll to be done, which is pretty long.
Interviewer: Oh, I think wrapping rolls is also an art...
Interviewee: Ah right, when...
Interviewer: Is there a trick to wrap good rolls?
Interviewee: When wrapping rolls, I think we should first wrap them up, after putting the filling in, very firmly, so the rolls won’t get loose.
